Ingredients
Olive oil
1 shallot, chopped
Carrots + cauliflower, chopped
Onion powder, garlic powder, paprika, thyme, turmeric
Garlic, salt & pepper
Dijon mustard
White rice
Chickpeas
Vegetable stock

Dilly Tahini
Tahini, water, garlic, lemon juice, tamari, maple syrup, dill, green onion, salt & pepper

DIRECTIONS
1. Sauté shallot in olive oil until soft. Add carrots and cauliflower and let them brown.
2. Stir in spices, garlic, Dijon, rice, and chickpeas. Add stock, bring to a boil, cover, and simmer until rice is tender.
3. Blend all tahini sauce ingredients until smooth.
4. Serve veggie rice with tahini, herbs, chili crisp, or sesame seeds.
